so sorry for the late reply!! (here is the edit in case anyone wants to see it)

i used photoshop cc 2017 (info on download here if you need it)

-basically i giffed parts of the video as usual, with about 25 frames max or the rest becomes even more of a headache

-then p much what you have to do is make a text layer and rasterise it whilst having all the frames on your gif timeline selected

-if you want the text to interact by moving, you have to go frame by frame moving the same now rasterised text layer in each one (and the same goes for fading out text, just lower the opacity in each frame)

-if you want the text to interact by changing in any other way (ie getting wiped away, cut up, etc) what i did was follow the above steps until the text layer is in the correct position/opacity in each frame, then hide it and duplicate it.

-this way when you reveal the duplicated layer, it won’t show up in every frame just the one you have selected + it will be in the same location/opacity etc as the original template layer you moved around at the beginning. 

-you can then change it however you want! e.g to make it look like lynn wiped the text off the wall, i erased parts of the text in each frame, whilst adding paint smears on the other side of her arm.
